MANGO PROBIOTIC POPSICLES

These popsicles are not only delicious, but they are also good for you! Because of the fiber from the mango and probiotics from the yogurt and kombucha, they are great for boosting gut health. They are also lower in sugar and fat and higher in protein than your typical ice cream pop. And though there is some sugar in the recipe, most of it comes from the natural sugars in the mango. and because of the protein in the yogurt you won’t experience a blood sugar spike as you might with a typical fruit pop. Health aside, these popsicles taste delicious and are a perfect treat for both adults and kids alike!

INGREDIENTS: (yield: 4-6 popsicles, depending on mold size)

  • 1 1/2 cups cubed mango

  • 1 cup non-fat plain Greek yogurt

  • 1⁄2 cup kombucha

DIRECTIONS:

  1. Blend all ingredients in a high-speed blender until there are no lumps and everything is combined.

  2. Pour mixture into molds and place in freezer for a minimum of 4 hours to set.

  3. Enjoy!

4Q Journaling Guide: Although there is protein in the popsicles from the Greek yogurt, the amount of protein per serving is not significant. Enjoy these popsicles as a post dinner treat or eat them as part of a bigger snack (they pair perfectly with some nuts or nut butter!).
